La salsa alfredo es una salsa para aderezar pastas. Originalmente contenía simplemente queso parmesano y mantequilla, aunque modernamente, además de dichos ingredientes, suele agregársele crema de leche. Algunas variantes incluyen perejil, ajo, huevo, vegetales, mariscos o pollo. Se hizo conocida en el restaurante Alfredo alla Scrofa de Roma, propiedad de Alfredo di Lelio.

Aunque tradicionalmente la Salsa Alfredo se use para comer con pasta o con fettucine, también se puede usar para acompañar pollo o mariscos, además de que es rápida y fácil de hacer, pero muy deliciosa.

Ingredientes:

5 cucharadas de mantequilla.
2 dientes de ajo machacados.
2 tazas de crema de leche.
1/4 de cucharadita de pimienta molida.
1/2 taza de queso parmesano rallado.
3/4 de taza de mozzarella.

Preparación: En una olla derrite la mantequilla. Añade el ajo y cocina un par de minutos a fuego medio. Luego pon la crema y la pimienta. Ajusta con sal si es necesario. Lleva a hervor sin dejar de mezclar con una cuchara de madera. Añade los quesos de a poco, primero el parmesano y luego el mozzarella. No dejes de mezclar porque se quemaría en el fondo. Siempre usa el fuego bajo para que derrita para no se salga de control.

Alfredo di Lelio opened the restaurant “Alfredo” in 1914 in Rome, after leaving the restaurant of his mother Angelina. In 1943, during the war, Di Lelio sold the restaurant to others outside his family.
